Baked Coconut Chicken Strips

ingredients

  • Chicken – 2.5 lbs
  • Egg (large) – 2
  • Unsweetened Coconut Milk (Silk) – 1/4 cup
  • Pepper – 1/4 tsp
  • Paprika – 1/2 tsp
  • Beer Can Chicken Seasoning (Weber) – 1 Tbsp
  • Unsweetened Coconut Flakes – 3/4 cup
  • Panko Bread Crumbs (Hyvee) – 1 1/4 cup

Makes 10 servings

1. Slice Chicken into desired size Strips

2. Combine and whisk Eggs & Coconut Milk

3. Combine and stir Pepper, Paprika, Chicken Seasoning, Coconut Flakes, and Bread Crumbs

4. Dunk Chicken into Egg mix (coating entire piece), then firmly press Breading mix into all sides

5. Bake @ 350 for 12-15 min
