Beef Enchiladas

ingredients

Ground Beef (90/10) – 32oz

Taco Seasoning – 1 Tbsp

Tomatoes – 100g

Diced Tomatoes w/ Green Chilis (La Preferida) – 1 Container

Corn (No salt added – HyVee) – 1/2 Container

Kidney Beans (No salt added – HyVee) – 1 Container

Jalapeno Slices (Hot & Sweet – Kroger) – 2oz

Cheddar Cheese (HyVee) – 1 Cup

Enchilada Sauce (Old El Paso) – 1 Container

Cilantro – to taste

Whole Wheat Tortillas – 8

*Makes 8 servings

1. In a Large pan, add Ground Beef and Taco Seasoning over medium-low heat

2. Once meat begins to brown, add: Tomatoes, Tomatoes w/ Chilis, Corn, Beans and Jalapenos. Stir for about 4-5 min

3. Add Cheese (save just a little to top enchiladas), 3/4 Enchilada sauce and heat, stirring on occasion until warm

4. Drain excess liquid

5. Add cilantro, mix, and add mixture evenly into Tortillas and roll

6. Place in Air Fryer, add remaining cheese and enchilada sauce to top

7. Air Fry @ 350 for 5 min
