Buffalo Chicken & Chickpea Quesadilla

ingredients

  • Burrito Tortilla (La Banderita) – 4
  • Rotisserie Chicken (Kirkland) – 8 oz
  • Chickpeas (or Garbanzo Beans, No Salt – Hyvee) – 1 Can
  • Olive Oil – 1 Tbsp
  • White Onion (diced) – 1
  • Minced Garlic – 2 Tbsp
  • Ranch Seasoning – 1 Tbsp
  • Hot Sauce (Franks) – 1/2 cup
  • Plain Nonfat Greek Yogurt (Chobani) – 1/2 cup
  • Reduced Fat Mozzarella (Crystal Farms) – 1 Cup

Makes 4 Servings

  1. In a large pan add: Olive Oil, Chickpeas, White Onion, and Garlic. Cook until Chickpeas are soft and you can squish them
  2. Add all remaining ingredients (except Tortillas) and cook until warm
  3. Add 1/4 of mixture to one side of a Tortilla, fold over, then cook on each side for about 2-3 minutes
