Buffalo Chicken Egg Muffins

  • Rotisserie Chicken – 6oz
  • Egg Whites (about 14) – 450g
  • Fetta Cheese (Fat Free – Atrisan Soiree) – 56g
  • Tomatoes (diced)- 50g
  • Sriracha – Hot Sauce – 4 Tbsp

*Makes 12 muffins

1. Crack and whisk Eggs in a medium bowl

2. Spray muffin tin with cooking spray and equally spread out ingredients – start with Egg Whites (roughly 1/2 to 2/3 full).

4. Bake at 350 for about 20 min.
