Cheesy Buffalo Chicken

ingredients

  • Chicken – 64 oz
  • Chicken Broth (Low Sodium – Simple Truth) – 3 Cups
  • Ranch Dry Mix Packet (Hy-Top) – 1 Packet
  • Garlic Sriracha Seasoning (Weber) – 1 tsp
  • Cholula Hot Sauce – 1/4 Cup
  • Plain Nonfat Greek Yogurt (Kirkland) – 1 1/3 Cups
  • Four Cheese (Hyvee) – 1/4 Cup

Makes 9 servings

1. Place Chicken and Chicken Broth in Instant Pot, cook on High for 8 min, let naturally release for 5 min, then quick release.

2. Transfer Chicken to Kitchen Aid mixer to shred (can also do by hand).

3. Mix in: Ranch packet, Garlic Sriracha, Hot Sauce, Greek Yogurt and Cheese.
