Cheesy Ground Beef & Rice

ingredients

  • Ground Beef (85/15 – Kirkland) – 20 oz
  • Olive Oil – 1/2 Tbsp
  • White Onion (diced) – 100g
  • Minced Garlic – 1 Tbsp
  • Chili Powder – 1 Tbsp
  • Ground Cumin – 1 Tbsp
  • Cheese (Queso – Supremo) – 56g
  • Brown Rice – 2 Cups
  • Low Sodium Chicken Broth (Pacific Foods) – 2 Cups
  • Beefsteak Tomato (diced) – 100g
  • Cilantro – garnish to taste

Makes 4 servings

1. Set Instant Pot to “Saute”¬†setting

2. Once hot, add Olive Oil then Onion and Garlic, stirring occasionally for about 2-3 min

3. Add Ground Beef, Chili Powder and Cumin. Stir occasionally for about 2-3 min – Beef starting to brown. Then press “Cancel”

4. Add Rice, then Chicken Broth (make sure rice is submerged), then top with Tomatoes.

5. Pressure cook on “High” for 7 min. Let naturally pressure release for 10 min, then quick release any remaining pressure

6. Stir in Cheese and top with Cilantro
