1. Set Instant Pot to “Saute” setting
2. Once hot, add Olive Oil then Onion and Garlic, stirring occasionally for about 2-3 min
3. Add Ground Beef, Chili Powder and Cumin. Stir occasionally for about 2-3 min – Beef starting to brown. Then press “Cancel”
4. Add Rice, then Chicken Broth (make sure rice is submerged), then top with Tomatoes.
5. Pressure cook on “High” for 7 min. Let naturally pressure release for 10 min, then quick release any remaining pressure
6. Stir in Cheese and top with Cilantro
