Chicken & Rice

ingredients

  • Chicken –  3 lbs
  • Brown Rice – 2 cups
  • Italian Blend Frozen Veggies – 2 packs
  • Green Pepper – 1 (diced or stripped)
  • Red Pepper – 1 (diced or stripped)
  • Chicken Broth (low sodium from Pacific Foods – 3 cups
  • Spices – Oregano, Onion, Garlic, Paprika

Makes 10 Servings

  1. Place Rice, Broth, Peppers and spices in Instant Pot
  2. Place Chicken on top and set to High Pressure for 15 min
  3. Shred Chicken and return to Pot mixing in Veggies
  4. Close lid and let sit to warm the veggies
