Chickpea Cucumber Feta Salad

ingredients

  • Cucumber (diced) – 1 large
  • Garbanzo Beans (No Salt – Hyvee) – 2 Cans
  • Red Onion (chopped) – 1 large
  • Feta Cheese (Soiree) – 1 container
  • Parsley – 1/4 Cup
  • Mint – 1/8 Cup
  • Lemon Juice – 2 Tbsp
  • Olive Oil – 1 Tbsp
  • Black Pepper/Salt – to taste

Makes 6 Servings

  1. Chop and dice Cucumber and Onion
  2. Mix everything together and enjoy!
