Chocolate Chip Pumpkin Bars

ingredients

  • Canned Pumpkin (Libby’s) – 122g
  • Natural Peanut Butter (Kirkland) – 3/4 Cup
  • Vanilla Extract – 1 tsp
  • Pumpkin Pie Spice (McCormick) – 1 tsp
  • Cinnamon – 1 Tbsp
  • Maple Syrup (Wagner’s) – 1/4 Cup
  • Coconut Flour (Bob’s Red Mill) – 1 Tbsp
  • Baking Soda – 1 tsp
  • Banana – 130g
  • Semi Sweet Chocolate Chips – 45g

Makes 12 Bars

1. Add all ingredients (Except Chocolate Chips) into a Blender or Food Processor and blend.

2. Spray a 9×9 baking dish and spread evenly

3. Bake @ 350 for about 30 min

*At 20 min mark, check and top with Chocolate Chips
