Coconut Curry Chicken

  • Olive Oil r tsp
  • Unsweetened Coconut Milk 2 cups
  • Basil
  • Curry Powder 2 tbsp
  • Chili Powder 1 tsp
  • Onion 1 large
  • Cornstarch r tbsp
  • Garlic – 4 cloves
  • Ginger tsp
  • Salt/pepper to taste

Makes 8 servings.

1. Toss everything into Instant Pot
2. Pressure cook using the “Poultry” setting
3. Shred Chicken
