Easy Chicken & Roasted Veggies

ingredients

  • Rotisserie Chicken (Kirkland) – 6oz
  • Avocado – 50g
  • Sweet Potato – 100g
  • Asparagus – 50g
  • Olive Oil – 1 tsp
  • Roasted Garlic & Herb Seasoning (Weber) – 2 tsp

Makes 12 servings

1. Chop Sweet Potato into bite sized pieces, chop the woody part of the Asparagus off

2. Season Sweet Potato with half Garlic & Herb seasoning and bake @ 400 for 10 min

3. Toss Asparagus in Olive Oil and other half of seasoning.

4. At 10 min mark, place in oven with Potatoes and bake for another 10-15 min (until desired texture)

5. Plate with Chicken and Avocado
