Eggplant Egg Bake

ingredients

  • Eggs – 12 Whites
  • Unsweetened Almond Milk – 1/2 cup
  • Ground Turkey – 1 lb
  • Eggplant – 300g
  • Onion – 100g
  • Yellow Pepper – 100g
  • Green Pepper – 50g
  • Hickory House Poultry Powder – 1 tbsp

Makes 4 Servings

1. Season then brown the Turkey.

2. Using the Turkey Fat, saute the veggies.

3. Mix Egg Whites with Almond Milk.

4. Spray a 13×9 pan and combine Veggies with Turkey, pour Egg mixture over top. Bake at 400 for about 15-20 min.
