Garlic & Herb Pork Tenderloin

ingredients

Pork Tenderloin – 80 oz

Lemon Juice – 1 Tbsp

Lime Juice – 1 Tbsp

Himalayan Pink Salt – 1/4 tsp

Black Pepper – 1 tsp

Olive Oil – 1 Tbsp

Coconut Oil – 2 Tbsp

Galic Powder – 1 Tbsp

Basil – 1 tsp

Onion Powder – 1 tsp

Thyme – 1 tsp

Parsley Flakes – 1 tsp

Oregano – 1 tsp

Roasted Garlic & Herb Seasoning (Weber) – 1 tsp

Makes 8 servings

1. Using a toothpick, poke small holes in the top of the Pork Loin

2. Pour Lemon/Lime juice over top, then add Salt/Pepper, and allow to marinate for at least 30-60 min

3. Add Olive Oil to pan and heat over Medium-High. Once hot, sear Pork on all sides for about 60-90 seconds each, then remove from heat

4. Combine: Garlic, Basil, Onion, Thyme, Parsley, Oregano and Garlic & Herb seasoning. Mix together

5. Place Pork in baking pan, lined with Aluminum Foil

6. Melt Coconut Oil, then pour over top of Pork

7. Season all sides generously with Spice mixture

8. Cover pan with Aluminum Foil over top

9. Bake @ 350 for about 15-20 min

10. Remove from Oven and keep covered for an additional 5-10 minutes
