Giant PB Protein Cookie

ingredients

Peanut Butter Cup Protein Powder (FNX) – 1 Scoop

PB Fit – 2 Tbsp

Whole Wheat Flour (Hyvee) – 2 Tbsp

Coconut Flour (Bob’s Red Mill) – 2 1/2 Tbsp

Baking Soda – 1/2 tsp

Stevia (Sweetleaf) – 10 Drops

Egg (large) – 1

Plain Nonfat Greek Yogurt (Kirkland) – 1/4 cup

Maple Syrup (Wagner’s) – 2 Tbsp

Semi Sweet Chocolate Chunks (Nestle) – 12g

*Makes 2 Servings

1. Add all dry ingredients and mix (first 5 ingredients)

2. Add all wet ingredients into same bowl and mix, finally add chocolate chips

3. Spray an air fryer approved dish (I used a mini cast iron skillet), and pour mixture in evenly

4. Air Fry @ 300 for 8 min

*If you want it less “gooey” air fry for 12 min
