Ground Turkey Stir Fry

ingredients

Ground Turkey – 1 lbs

Brown Rice – 2 Cups

Red Peppers – 2 Cups sliced

Green Peppers – 2 Cups sliced

Onion – 1 Cup sliced

Black Beans – 1 Can

Coconut Oil – 2 tbsp

Sweet Potato (Side) – 1/2 medium

Makes 4 servings

1. Make Rice

2. Chop Sweet Potato to desired size, drizzle with Coconut Oil and bake @ 400 until desired texture (roughly 20 min – depending on size).

3. Season Ground Turkey and cook in warm pan with remaining Coconut Oil.

4. After turkey browns, add veggies.
