Healthy Chocolate Cake

ingredients

  • Coconut Flour (Bobs Red Mill) – 1/4 cup
  • Almond Flour (Kirkland) – 1 cup
  • Resilience Brownie Batter Protein (FNX) – 2 scoops
  • Plain Nonfat Greek Yogurt (Chobani) – 1 1/2 cups
  • Unsweetened Applesauce – 1/2 cup
  • Egg Whites (large) – 4
  • Vanilla Extract – 1 tsp
  • Stevia (Sweet Drops) – 5 drops
  • Coconut Oil – 2 tsp
  • Bittersweet Chocolate Chips (Ghirardelli) – 60g

Makes 8 servings

1. Mix: Coconut flour, Almond flour, and Protein Powder

2. In separate bowl, mix: Applesauce, Egg Whites, Vanilla and Stevia

3. Stir liquid mixture and Greek Yogurt into the dry ingredients in batches

4. Spray a loaf pan with cooking spray, pour in the mixture and bake for about 30 min @ 350 (a toothpick should come out clean)

5. In a microwavable bowl, melt Coconut Oil and Chocolate Chips, then stir and pour over-top of cake

6. Let cool for about 15 min, then cover with plastic wrap. Once pan is cool enough, place in refrigerator overnight

*This is highly important if you want a cake like texture. You can eat it right away (it’ll taste the same), but it won’t support itself
