Italian Pasta w/ Butternut Squash

ingredients

Mild Italian Sausage – 12 oz

Italian Sausage – 16 oz

Butternut Squash – 40 oz

9 Grain Ancient Grain Noodles (Mrs. Millers) – 1 Container

Yellow Onion (diced) – 200g

Baby Spinach – 4 Cups

Sage Leaves (thinly chopped) – 1 Tbsp

Fresh Grated Parmesan Cheese – 2 Tbsp

Makes 4 servings

1. Peel and seed Butternut Squash. Bake at 350 for 60 min, then dice

2. Bring water to boil and cook Pasta

3. In a large pan over medium heat, combine and brown both ground Sausages (Mild/Regular), add in Onion

4. Once sausage in browned, add in Spinach, stir occasionally until spinach has sufficiently “wilted”

5. When everything has finished cooking, combine, stir in Sage then Parmesan Cheese
