1. In large pot, boil water. Add Noodles, cook until desired consistency
2. In a large pan over medium heat, melt Coconut Oil and add Shallot and Garlic. Cook for about 5 min
3. Add Sausage, Tomato Paste and Cayenne Pepper, cook for another 5 min (until sausage browns), stirring frequently
4. Add Vodka, stir and scrape anything off bottom of pan
5. Add Coconut Cream and most of the Parmesan Cheese (save some for garnish), stir and combine until cheese has melted
6. Add in the Noodles, combine and top with remaining parmesan
