Eggplant – 100g

Tomato – 200g

Fresh Mozzarella (Bel Gioioso) – 6 oz

Basil – 2 tbsp

Balsamic Vinegar – 1 tbsp

Garlic – 3 cloves

Pizza Sauce (Hyvee) – 1/2 cup

Flatbread – (see recipe at bottom)

Makes 4 servings

1. Spread Pizza Sauce over flatbread, then top with remaining ingredients

2. Bake at 400 until warm
