Pork Tenderloin w/ Caramelized Onions & Apples

ingredients

Pork Tenderloin- 4 lb

Chicken Broth (Pacific Foods – Low Sodium) – 2 cups

Cinnamon – 1 Tbsp

Olive Oil – 2 Tbsp

Golden Raisins – 1/2 cup

Honey Dijon Mustard – 1/4 cup

Onion – 160g

Fuji Apple – 200g

Roasted Garlic Bread Crumbs – 1/2 cup

Salt/Pepper – to taste

Makes 12 servings

1. Rub Honey Dijon Mustard over Pork Loin, then top with Bread Crumbs, and Salt/Pepper.

2. Add Olive Oil to pan, cook Onions and Raisins for about 2-3 min, then add Pork and sear each side for about 1-2 min each.

3. Add Chicken Broth to baking dish, transfer Pork and top with Apple and Cinnamon.

4. Bake at 400 until internal temp reaches 145.
