Pumpkin Choc. Chip Pancakes

ingredients

  • Whole Wheat Flour – 1 Cup
  • Baking Powder – 1 Tbsp
  • Cinnamon – 1 tsp
  • Frosted Cinnamon Roll Cookie Butter Powder – 1 Tbsp
  • Nutmeg – 1 tsp
  • Sugar Pumpkin Puree – 80g
  • Unsweetened Vanilla Almond Milk (Hyvee) – 1 Cup
  • Egg (large) – 1
  • Maple Syrup (Wagner’s) – 2 Tbsp
  • Vanilla Extract – 1/2 tsp
  • Coconut Oil (melted) – 2 Tbsp
  • Dark Chocolate Chunks (Private Selection) – 2 Tbsp

Makes 7 servings

1. Combine all Dry ingredients into a bowl (except Choc Chunks

2. Combine all Wet ingredients into a separate bowl

3. Combine Dry and Wet together, stirring in Choc Chunks

4. Heat a griddle and spray with cooking oil

5. Cook about 2-3 per side depending on heat
