Pumpkin Pancakes

ingredients

  • Egg (large) – 2
  • Unsweetened Almond Milk (HyVee) – 2/3 Cup
  • Vanilla Extract – 2 tsp
  • Sugar Pumpkin Puree – 180g
  • Rolled Oats (Quaker) – 1.5 Cups
  • Baking Powder – 2 tsp
  • Cinnamon – 1 Tbsp
  • Nutmeg – 1 tsp
  • Maple Syrup (Wagner’s) – 1 Tbsp

Makes 6 servings

1. Combine all ingredients into a food processor/blender

2. Let mixture sit in refrigerator for 30 min (Oats need to absorb the liquid and thicken)

3. Spray griddle with cooking oil and make pancakes
