Roasted Chickpea & Broccoli Burrito

ingredients

  • Tortillas
  • Yellow Onion – 1 large
  • Red Bell Pepper – 1
  • Broccoli – 1
  • Chickpeas – 3 cups
  • Olive Oil – 3 tbsp
  • Soy Sauce – 2 tbsp
  • Chili Powder – 2 tsp
  • Cumin – 1 tsp
  • Garlic – 4 cloves minced
  • Lime – 1/2

Makes 6 servings

1. Chop onion, pepper, & broccoli. Combine with chickpeas in a large bowl.
2. Put in oil & soy sauce, stir, and throw in spices.
3. Bake at 425 for 20 min.
4. Add garlic, stir & bake for another 15 min.
5. Add Lime Juice
