Seared Red Pepper Pasta

ingredients

  • Ground Turkey – 1 lb
  • Olive Oil – 1 Tbsp
  • Rotini Pasta (Barilla Protein) – 1 Box
  • Green/Red/Yellow/Orange Bell Peppers (Chopped) – 1 each, medium
  • Red Onion (Chopped) – 1 medium
  • Minced Garlic – 2 Tbsp
  • Cannellini Beans (No Salt – Hyvee) – 1 Can
  • Garbanzo Beans (No Salt – Hyvee) – 1 Can
  • Tomato Paste – 1/4 Cup
  • Basil – 1/4 Cup
  • Red Pepper Flakes – 1 tsp
  • Salt/Pepper – to taste
  • Unsalted Cashews – 1/3 Cup
  • Unsweetened Almond Milk (Hyvee) – 1/2 Cup
  • Parmesan Cheese – 1/2 Cup

Makes 8 Servings

  1. Heat Olive Oil in a large pan or Wok over medium/low heat and sauté Peppers, Onion, and Garlic.
  2. Remove, then add Ground Turkey and cook until pink is gone.
  3. Boil Water and Cook Pasta to preferred texture.
  4. In a Food Processor add all ingredients (except for Turkey, Pasta, and Parmesan Cheese) and blend until smooth.
  5. Combine everything in your large pan/wok, and enjoy!
