Sheet Pan Balsamic Chicken

ingredients

  • Chicken – 40 oz
  • Carrots – 16 oz
  • Asparagus – 7 oz
  • Sweet Potato – 500g
  • Olive Oil – 3 Tbsp
  • Salt – 1 tsp
  • Pepper – 1 tsp
  • Garlic Powder – 1 tsp
  • Thyme – 1 tsp
  • Balsamic Vinegar – 8 Tbsp (1/2 cup)
  • Honey – 4 Tbsp
  • Parmesan Cheese – 1/2 cup

Makes 8 servings

1. Dice Potatoes and cut Asparagus in half

2. In a sauce pan, add Balsamic and Honey, bring to a boil and cook for about 5 min. Remove from heat

3. Arrange Chicken and Veggies on sheet pan

4. Drizzle Olive Oil over everything, then season with Salt, Pepper, Garlic, and Thyme.

5. Drizzle HALF your sauce over everything, sprinkle with Parmesan Cheese

6. Bake @ 400 for 20-25 min then drizzle remaining sauce over top
