Sheet Pan Chicken & Colorful Veggies

ingredients

  • Chicken – 25 oz
  • Sweet Potato – 400g
  • Red Skin Potato – 400g
  • Black Pepper – 1 tsp
  • Lemon Juice – 1 Tbsp
  • Lime Juice – 1 Tbsp
  • Olive Oil – 3 Tbsp
  • Italian Seasoning – 1 Tbsp
  • Zesty Lemon Seasoning (Weber) – 1 tsp
  • Garlic Powder – 1 tsp
  • Onion Powder – 1 tsp
  • Red Bell Pepper (1 large) – 200g
  • Orange Bell Pepper (1 large) – 250g
  • Yellow Bell Pepper (1 large) – 200g
  • Zucchini – 300g
  • Yellow Squash – 300g
  • Broccoli – 350g
  • Parmesan Cheese – 1/2 cup

Makes 6 servings

1. Cut Chicken, Sweet Potato and Red Potato into bite sized chunks

2. Dice remining veggies: Red/Orange/Yellow Pepper, Zucchini, Squash and Broccoli

3. Place Sweet & Red Potato on baking sheet, drizzle with 1 Tbsp Olive Oil and Pepper. Bake @ 400 for 10 min

4. In a large bowl, combine: Chicken, Veggies, Lemon/Lime Juice, 2 Tbsp Olive Oil and Spices (Italian, Zesty Lemon, Garlic/Onion Powder)

5. After Potatoes bake for 10 min, add Chicken/Veggie mixture to sheet pan and bake for an additional 15 min.

6. Top with Parmesan Cheese.
