Sheet Pan Chicken Fajitas

ingredients

  • Chicken – 20oz
  • Red Bell Pepper (1 large) – 190g
  • Green Bell Pepper (1 large) – 190g
  • Jalapenos – 50g
  • Red Onion (1 large) – 200g
  • Pineapple – 20 oz
  • Garlic Powder – 2 tsp
  • Cumin – 2 tsp
  • Coconut Oil – 2 Tbsp
  • Honey – 2 Tbsp
  • Lime Juice – 2 Tbsp

Makes 4 servings

1. Cut Chicken, Peppers and Onions into strips

2. Cut Pineapple in bite sized chunks

3. Melt and mix Coconut Oil and Honey

4. Add all ingredient into a large bowl and mix

5. Spread on sheet pan and bake @ 400 for about 12-15 min
