Smokey Rack of Lamb

ingredients

Rack of Lamb – 2 lbs

Olive Oil – 1 1/2 Tbsp

Low Sodium Soy Sauce – 2 Tbsp

Balsamic Vinegar – 1 Tbsp

Lemon Juice – 1 tsp

Liquid Smoke – 5 Drops

Zesty Lemon Seasoning (Weber)

Onion/Garlic Powder – to taste

Makes 4 servings

1. Mix Soy Sauce, Balsamic, Liquid Smoke and Lemon Juice.

2. Pour over Lamb and marinade for 1 hour on both sides.

3. Season with Zesty Lemon, Garlic and Onion powder.

4. Add Olive Oil to Cast Iron Skillet and sear each side for about 90 seconds.

5. Pour marinade over seared Lamb

6. Bake @ 450 for 10 minutes, then turn off oven, open door and leave in for an additional 2 min.

7. Let stand for at least 10 min before cutting in.
