Spicy Turkey Taco Pasta

ingredients

  • Ground Turkey – 28 oz
  • Olive Oil – 1 Tbsp
  • Taco Seasoning (Wild Tree) – 2 Tbsp
  • Canned Corn (Hyvee) – 1 container
  • Beef Broth – No salt (Hyvee) – 2 Cups
  • Water – 1 1/2 Cups
  • Protein Pasta (Barilla) – 224g
  • Diced Tomatoes with Green Chilies (La Preferida) – 1 container
  • Chipotle Pepper in Adobo sauce (La Costena) – 1 container
  • Triple Cheddar Cheese (Hyvee) – 4 oz
  • Garlic – 1 Tbsp

Makes 6 servings

  1. Set Instant Pot to “Satue” once hot, add Olive Oil and Turkey
  2. Add Taco Seasoning, stir until Turkey is browned
  3. Once browned, press “cancel” then add: Corn, Broth, Water, Pasta, Tomatoes, Chipotle Pepper and Garlic
  4. Mix everything, ensure pasta is underneath the liquid
  5. Seal IP and set on High for 5 min. Once finished, let naturally release for 5 min then quick release any remaining pressure
  6. Mix in Cheese and serve!
