Sweet Corn & Green Chile Baked Flautas with Ground Turkey

ingredients

  • Olive Oil – 1 tsp
  • Onion – 1 cup chopped
  • Chili Powder – 2 tsp
  • Cumin – 3/4 tsp
  • Garlic – 4-5 Cloves
  • Pinto Beans – 2 cups cooked
  • Mild Green Chiles – 1 can (4 oz)
  • Lime – juice
  • Corn – 1 cup
  • Tortillas                                              
  • Ground Turkey – 1 lb

*Makes about 4 servings of 2 Flautas

1. Cook ground turkey on a pan, adding in onion until browned.

2. Add chili powder, cumin, salt & garlic – cook for another min.

3. Add remaining ingredients.

4. Place filling in a straight line toward the edge of tortilla and roll tight.

5. Place on a baking sheet and bake 10 min. Flip & bake another 5 min.
