1. In large pan or wok, heat Olive Oil.
2. Add in sliced Peppers, Tomatoes & Eggplant.
3. Add in Halibut & Basil, cook for about 3-4 min on each side.
Halibut – 2 lbs
Olive Oil – 1 tbsp
Basil
Grape Tomatoes – 1 container
Red Bell Pepper – 1
Yellow Bell Pepper – 1
Eggplant – 1
