Bison Mac & Cheese

ingredients

  • Ground Bison (90/10) – 1 lb
  • Protein Penne Pasta (Barilla) – 1 Box
  • Poblano Peppers (Chopped) – 2 Medium
  • Roasted Garlic & Herb Seasoning (Weber) – 1 Tbsp
  • Low Fat Cheddar Cheese – 2 Cups
  • All Purpose Flour – 3 Tbsp
  • Light Butter (LandoLakes) – 2 Tbsp
  • Fat Free Cream Cheese (HyVee) – 2 oz
  • Unsweetened Almond Milk (HyVee) – 2 Cups
  • Broccoli (Steamed & Chopped) – 4 Cups

Makes 6 Servings

  1. Bring water to a boil and cook Noodles to desired texture.
  2. Add about 1/2 Tbsp of Butter to pan over medium-low heat and begin to cook Poblanos.
  3. In the same pan, brown the Bison and season with Garlic & Herb.
  4. Add Butter and Flour to a large pan (or wok) and whisk. Then add Almond Milk and Cream Cheese, continue to whisk for about 3 min.
  5. Add all ingredients (except Noodles) to your large pan and combine. Stir until warm and cheese is melted.
  6. Add Noodles and enjoy!
