Chipotle Chicken Mac

ingredients

  • Rotisserie Chicken (Kirkland) – 1 1/2 lbs
  • Protein Elbow Noodles (Barilla) – 1 Container
  • Chipotle Peppers in Adobo Sauce (La Costena) – 4 pieces
  • Light Butter – 2 Tbsp
  • All Purpose Flour – 3 Tbsp
  • Unsweetened Almond Milk (Hyvee) – 2 Cups
  • Fat Free Cream Cheese (Hyvee) – 2oz
  • Low Fat Cheddar Cheese – 1 Cup
  • Fat Free Mozzarella Cheese (Kroger) – 1 Cup
  • Salt/Pepper/Garlic Powder/Onion Powder/Cumin/Chili Powder – to taste

Makes 6 Servings

1. Bring water to a boil and cook Noodles to desired texture.

2. Add Butter and Flour to a large pan (or wok) and whisk. Then add Almond Milk and Cream Cheese, continue to whisk for about 3 min.

3. Add all ingredients (except Noodles) to your large pan and combine. Stir until warm and cheese is melted.

4. Add Noodles and enjoy!
